A creamy spinach soup is an appetizing start to a meal. Spinach isn’t really my favourite, but given its nutritional values, I try to stir up something interesting, like the crackling spinach. This cream of spinach soup is now a standard in my kitchen, especially in the winters. Its quick, tasty, and healthy. Enjoy!
Ingredients:
2 cups or 500 grams fresh, chopped spinach
1/2 cup chopped onions
2 cups water
1 teaspoon minced garlic
2 tsp butter
2 tbsp all-purpose flour
2 cups milk
Salt and pepper to season
Method:
1. Boil the spinach, onion, and garlic in a large pot over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer until onion is tender.
2. In a saucepan, melt the butter and whisk in the flour. Cook for a minute or two. Slowly stir in the milk and mix until smooth.
3. Pour the cream mixture into the spinach soup. Simmer for about 5 minutes, until thick . Season to taste with salt and pepper.
For a richer version, add a little heavy whipping cream while making the cream mixture. You can top the soup with grated cheese.
